Quarantine cooking: easy Cauliflower soup

Self quarantining for 3 weeks and we are already fed up of cooking everyday (yeah, my employer provided lunch every day) thanks to staying home and working from home. I am in constant search of recipes which can be made and are still healthy.

Yesterday I tried to make a simple cauliflower soup which turned out to be pretty good for the efforts I had to put in it. I am sharing my easy recipe with you all, in case you need it.

Ingredients:

  • cauliflower – one whole thing
  • one small red / any onion
  • one clove of garlic
  • 1 table spoon any cooking oil that you have
  • 1 litre boiling water
  • maggi vegetable broth cubes
  • optional – thyme

Recipe:

Cut the onion and garlic in small pieces and put the water for boiling. Also separate the cauliflower in smaller chunks.

Heat the oil in a thick bottomed deep pot. Once the oil is hot, put the onions in and wait until they starting turning translucent. Add the garlic now and let it also turn golden.

Add carefully the cauliflower now ( if you just washed the cauliflower and it still has a little bit of water in it, the oil is going to jump around so be careful). Roast the cauliflower for few minutes and add the boiling water and add the broth cube appropriate for 1 litre.

Mix it all well and let the soup cook until cauliflower is soft. You are almost there. Now take the soup off the heat and use any kind of mixer (hand mixer also works fine here) to purify the soup.

Once purified, let it simmer on the heat for few minutes. And your quick and easy soup is ready to serve.
